Bio

Professor of applied physiology at the University of Exeter in the UK, one of the world's foremost endurance-performance scientists, whose work underpinned Nike's Breaking2 and the sub-two-hour marathon.

Protocol

His research covers VO2 kinetics, the limits of exercise tolerance, and — most famously — dietary nitrate: he showed that beetroot juice raises nitric-oxide levels, lowers the oxygen cost of exercise, and improves endurance and muscle force.
