Are you Caldwell Esselstyn? Claim this pageSurgeon, researcher, and former Cleveland Clinic clinician, featured in the documentary Forks Over Knives and author of Prevent and Reverse Heart Disease. His long-running study argued that advanced coronary disease can be halted and reversed with diet alone.
A strict whole-food, plant-based, oil-free diet: no meat, fish, poultry, dairy, or added oils, and no nuts or avocados for those with established heart disease; unlimited vegetables, legumes, and whole grains, greens several times a day, and about three servings of whole fruit — all aimed at protecting the endothelium, the lining of the blood vessels.
Reverse the disease, not just slow it: eliminate the foods that injure the vascular lining so the body can heal itself, and keep the diet strict enough to be therapeutic rather than merely 'heart-healthy.'
