A whole-food, plant-based diet built from vegetables, fruits, whole grains, and legumes, with animal products — including dairy — minimized or removed, and nutrition drawn from whole foods rather than isolated supplements. He frames food as an integrated system, not a sum of single nutrients.
Nutrition as the master variable: the composition of the diet — especially the ratio of plant to animal foods — drives long-term disease risk more than any single nutrient, and whole plant foods are the lever.
